Russian Food is very much a product of the Russian climate and environment. With short bountiful growing seasons and long harsh winters, Russian diet traditionally consisted of milled grains, storable produce (like potatoes, beets, carrots and cabbage), plus fish, poultry, beef, pork and game.

Cheap Eats
Eating a good hot lunch can be quite inexpensive in Russia and Ukraine. The secret is theStalovaya (Russian canteen). Most schools and universities have a canteen, as do health centers, commercial areas, etc. Lunch consists of your typical Russian food, nothing too fancy, but hot, fresh (most of the time) and at a fraction of the price of restaurants. Egyptian Salad ....Recipe


Egyptian Tomato and Cucumber Salad


Ingredients


·                                 8 large firm tomatoes
·                                 6 large cucumbers
·                                 1  onion ,
·                                 1 large lemon
·                                 white vinegar
·                                 salt

 

 

How to make it


·                                 Chop the tomatoes and cucumbers into bite-sized cubes and put into a medium salad bowl.
·                                 Salt very liberally.
·                                 Squeeze tin he juice of the whole lemon.
·                                 Add 2 Tbsp vinegar.
·                                 Toss the salad and taste.
·                                 Add more salt and vinegar (and lemon juice) to make your desired taste and tanginess.
·                                 Onion and or hot peppers can be added to this salad, if you wish.



















Tomato Watermelon Salad

           

Ingredients


·                                 5 cups watermelon, cubed 3/4 inch pieces
·                                 1 1/2 pounds ripe tomatoes, cubed 3/4 inch pieces
·                                 3 teaspoons sugar
·                                 1/2 teaspoon salt
·                                 1 small red onion, quartered and sliced
·                                 1/2 cup red wine vinegar
·                                 1/4 cup olive oil
·                                 cracked black pepper, to taste

How to make it


·                                 Combine watermelon and tomatoes in a large bowl. Sprinkle with sugar and salt, tossing to coat. Set aside and let stand for 15 minutes.
·                                 Stir together with fruit, the onion, vinegar and oil. Cover and chill for 2 hours.
·                                 Serve chilled (over lettuce leaves if desired).










Bacon Tomato Pasta Salad

Ingredients


·                                 2 cups uncooked elbow macaroni
·                                 5 green onions finely chopped
·                                 2 large tomatoes diced
·                                 1-1/4 cup celery diced
·                                 1-1/4 cup mayonnaise
·                                 5 teaspoons white vinegar
·                                 1/4 teaspoon salt
·                                 1/4 teaspoon pepper
·                                 1 pound cooked bacon crumbled

How to make it


·                                 Cook macaroni according to package directions.
·                                 Drain and rinse in cold water.
·                                 In large bowl combine macaroni, green onions, tomatoes and celery.
·                                 In a small bowl combine mayonnaise, vinegar, salt and pepper then pour over macaroni mixture then stir to coat and put in rectangular baking pan.
·                                 Cover and chill for 2 hours.
·                                 Just before serving add bacon.
















Corn and Tomato Salad with Cilantro Dressing

Ingredients


·                                 Combine in large bowl:
·                                 3 cups  - can  frozen corn 
·                                 5 medium tomatoes, halved, seeded, chopped
·                                 2/3 cup finely chopped red onion

            In blender, purée until smooth:

·                                 1/4 cup olive oil
·                                 1/4 cup chopped fresh cilantro
·                                 2 tablespoons chopped fresh mint
·                                 2 tablespoons white wine vinegar
·                                 1 tablespoon fresh lime juice
·                                 2 teaspoons (packed) golden brown sugar
·                                 1 garlic clove
·                                 salt and pepper

 

How to make it


·                                 Just before serving, pour dressing over corn mixture and toss.
