Sweet Potato Chili


2 tbsp extra virgin olive oil
4 cloves garlic, minced
1 onion, finely chopped
4 tbsp chili powder (+dash of hot chile powder to taste)
1 tbsp cumin
1 tbsp oregano
1 tbsp paprika
½ tsp fresh ground pepper
½ tsp sea salt
2 sweet potatoes, peeled and cut into 1" cubes
32 oz water or broth
1 red bell pepper, seeded and chopped
1 green pepper, seeded and chopped
2 cans 28oz petite diced tomatoes with juice
1 can 15oz black beans, rinsed and drained
1 can 15oz kidney beans, rinsed and drained
Heat oil in large pot over medium heat. Add garlic and onion. Saute until onion is slightly translucent, about 4 minutes.
Add all other ingredients, cover and cook 30 minutes are until the sweet potatoes are soft.
