Banana Bread recipe


Ingredients:
- 1/3 cup of vegan margarine
- 1/2 cup of sugar
- 2 cups of flour
- 1 1/2 teaspoons of baking powder
- 1/2 teaspoon of baking soda
- 2 ripe saba bananas, mashed
- 1/2 cup of soy milk
- 1 teaspoon of vanilla
- 1/2 cup of finely chopped cashew nuts
Preparation:
- Set the oven to 350 degrees F.
- Cream together the vegan margarine (or vegetable oil) and sugar; stir in the flour, baking powder and baking soda.
- Add the remaining ingredients and mix thoroughly.
- Pour into a lightly oiled loaf pan and bake for approximately an hour or just until the cake springs back when lightly touched.
- Remove the pan from the oven and cool for about 10 minutes.
- Remove the bread from the baking pan and allow to cool completely on a wire rack.
- Once the cake is cooled, spread on an Avocado Frosting for a distinctive combination of taste and texture.
Avocado Frosting
Ingredients:
- 8 oz. of avocado meat, approximately 2 small to medium avocados
- 2 tsps. of lemon juice
- 1 lb. of sifted confectioner's sugar
- 1/2 tsp. of lemon extract
Directions:
- Peel and pit the avocados. Then mash the meat.
- Place the avocado meat into a large mixing bowl along with the lemon juice and beat until creamy and lightened in color (approximately 3 minutes).
- Add the sifted confectioner's sugar, 1 teaspoon at a time, and beat until smooth.
- Add the lemon extract and continue mixing to combine thoroughly.
- Spread evenly on top of your Banana Bread.
